Princeton Farm Fresh: The Market is Open
This is the last week for the Caldwell County Farmers Market. I can hardly believe it has been 10 weeks. We have been asking our customers to fill out a survey of their experiences at the market to include things we have done right, and ways we can improve for next year. Our board will be getting together in the next month discussing these surveys and how our next years market will improve. We already know that we will be extending the start and end times. Beginning earlier next year and ending a bit later. I would love for everyone to stop by Thursday and fill out one of these surveys and share with us your vision for the traditional market. In addition, we will have all of our Non-profits that have been with us during the year coming out once again. I really appreciate the way Princeton has come out to support this traditional market. I am always amazed at the participation and love ya’ll show for your community.

Welcome to September! If you’re one of the 97% of people in town affected by the start of the school year, I hope it’s been a smooth transition for you. Game days are already upon us, too, so the sleepy summer town of Athens has truly been replaced with the bustling city of Athens.
Thinking of all the growth of both the town and the university in recent years, I want to shine a light on one of the unequivocally great areas of growth: UGA’s sustainable agriculture program. It didn’t even exist a few years ago, and already it’s become one of the premier programs of its kind in the country. Not only are students getting immersed in it full time, but the program also offers workshops and classes for new and long-time growers alike, all across the state. Looking at the calendar of events here: http://sustainagga.org/news.html, I see workshops of small ponds, livestock management, attracting honeybees and other pollinators to your garden, growing cover crops, and field trips to working sustainable farms. All of these are open to the public, and you can find details and registration links there on the calendar.
They also offer a journeyman training program for interested beginning growers, even those who (as I did) want to start part time. They have a whole section of information and links elsewhere for people interested in small farms and other small food producing operations, located here: http://sustainagga.org/SmallFarms.html. That page is one of the most comprehensive resources for beginners I’ve seen anywhere, and I wish I had something like that when I was transitioning my large garden to a market microfarm fifteen years ago.
It’s wonderful to see so much progress in the program in so little time, especially since the university (and Georgia agriculture in general) had such a reputation for being anti-organic for so long. The overall emphasis is still overwhelmingly in favor of industrial agriculture, but no longer exclusively. And it’ll only get better from here.
One last thing this week: several weeks ago, a fellow came up to me on Thursday with a question about payment for a previous week’s order. If that was you, I didn’t catch your name, and so haven’t been able to look things up for you and track down an answer. Can you reply to this email and let me know what name your account is under? Other Area Farmers Markets
The Athens Farmers Market is open on Saturdays at Bishop Park and Wednesday afternoons downtown at Creature Comforts. You can catch the news on their website. The West Broad Farmers Market from the Athens Land Trust is open Saturday mornings and their farm stand is open Tuesday afternoons. They have a website too. A new Athens Sunday market has opened up at the Classic Center, every Sunday from 11 to 4 now through October. They have a website here: http://www.sundaycentermarket.com. The Comer Farmers Market is open in downtown Comer on Saturday mornings. The Oconee County farmers market is open Saturday mornings in front of the Oconee County Courthouse in Watkinsville. The Shields Ethridge Cultivator Market is held monthly in Jefferson. If you know of any markets operating, please let me know.
All of these other markets are separate from ALG (including the Athens Farmers Market) but many growers sell at multiple markets. Please support your local farmers and food producers, where ever you’re able to do so!

I hope this email finds you well. This weekend is turning out to be full of community and food. What more could one ask for. Last night I shared a meal with some Locally Grown customers and friends… and when I walked in to the kitchen our host said “This food is just so exciting to me!” With a huge smile and agreement, we dove into peeling, cleaning, chopping and cooking the local goodies. It was the first day in the United States for their friend Joost, who was visiting with his Wife who’s name I don’t believe I can spell correctly from memory. They brought some local cheese from the Netherlands for an appetizer, and we all hummed and haahed while trying the delicious cumin infused cheese that was aged for over a year. They too enjoy new foods. She picked up a turnip and we talked about the different vegetable names in Dutch and English and if they grew back home. They shared pictures of travels and family, and we talked about what they plan to do while exploring the States. Dinner was served under the hickory tree as the sun gained vibrancy over Lake Lanier. The squirrels seemed to have fun aiming for our heads with partly consumed tree ammunition. The roasted root veggies, green beans, chanterelles, and a big salad was gobbled up as we enjoyed each other’s company.
Community is so important, and I look forward to planning some ways we can increase the connections we have besides the hustle of picking up local food. Which reminds me, I hope you say “Hi” to the others that you may see at pickup. I find it especially interesting in Gainesville to see so many different walks of life come together for fresh food. That’s all I have for now, because I’m off to another dinner with market friends. Anyone that knows her cooking would be jealous, so I will spare the names! I hope this rainy evening was full of good food and good company as you use up the rest of last market’s goodies.

Ethiopian Collard Greens

These are my favorite collard greens ever. If you have visited one of the Ethiopian restaurants in town, this is how they are. The nigella seeds are a strange ingredient, but worth the trip to the International Market to get them if you can – they make the dish! You can also substitute coconut oil for the butter.
4 tbsp. unsalted butter
1/8 tsp. black cardamom seeds
1/8 tsp. ground fenugreek
1/8 tsp. nigella seeds
¼ cup extra-virgin olive oil
1 large yellow onion, minced
3 cloves garlic, minced
2 Thai chiles, stemmed, seeded, and minced
1 1" piece ginger, peeled and minced
1½ lbs. collard greens, stemmed and cut crosswise into ¼"-wide strips
Kosher salt and freshly ground black pepper, to taste
White wine vinegar, to taste
Heat butter in a 6-qt. pot over medium heat. Add cardamom, fenugreek, and nigella and cook, stirring often, until fragrant, 1–2 minutes. Increase heat to medium-high and add oil; add onions and cook, stirring often, until browned, 10 minutes. Add garlic, chiles, and ginger and cook, stirring often, until soft and fragrant, 3 minutes. Add collards, 1? cups water, and salt and pepper; cover and bring to a boil. Reduce heat to low and cook, stirring occasionally, until collards are tender, 50–55 minutes. Stir in vinegar and serve collards hot.

We have a great week of veggies for you! There is so much selection this time of year, with the overlap of summer and fall flavors.There is so much variety offered and we hope you are taking the opportunity to try something new!
It still seems like a long way away, but remember that we grow and sell year round! We are planning and planting our winter crops now, and look to have a good selection of cold-hardy vegetables for you. It is impossible to predict what the winter weather holds in store for us. The past couple of winters have been rough! But, we do work with a variety of local farmers that have years of experience in overwintering crops in hoop houses, so we expect to have some fresh veggies for you!
